As some of y’all know, I have 2 kiddies and 2 go-to healthy baking sites. Elana’s Pantry and Chocolate Covered Katie. I’ve been dying to try Chocolate Covered Katie’s gluten-free black bean brownies recipe — since my kids LOVE chocolate and I’m always trying to find ways to sneak protein and fiber into their diets. Chocolate Covered Katie to the rescue! Again!
This was an absolute hit with my kids — and the entire pan of brownies lasted less than 8 hours. But be sure to EAT THEM WARM! OR EAT THE BATTER STRAIGHT UP! (It’s vegan – so there are no eggs – so you’re good to go!)
GLUTEN-FREE BLACK BEAN BROWNIES
SIMPLE INGREDIENTS
- 1 1/2 cups black beans
- 2 tbsp cocoa powder
- 1/2 cup quick oats 40g
- 1/4 tsp salt
- 1/3 cup pure maple syrup
- pinch uncut stevia OR 2 tbsp sugar
- 1/4 cup oil (coconut, vegetable)
- 2 tsp pure vanilla extract
- 1/2 tsp baking powder
- 1/2 cup to 2/3 cup chocolate chips (I use Enjoy Life.)
