PUMPKIN PIE SPICE ALMOND MILK

I have had a crappy couple months, I must say.  There has been the loss of 3 loved ones, the election, a compromised immune system that has left me with a cough/cold/flu all season — and a bad virus that stuck me in bed for 2 weeks and made me cancel my staycation with my husband for our anniversary celebration.  I am O-V-E-R 2016.

And to make matters worse, I am currently unable to practice taekwondo — the one therapy that allows me take my mind off life and its stresses.  Last weekend, I was instructed to do a flying side-kick with 2 feet against the board/pad of impact — and upon my landing, I heard a SNAP, CRACK, POP — on my knee that already has a fully torn ACL.  I cried.  I literally cried like a baby in front of the entire class, curled up in a fetal position on the floor — and my Grandmaster had to cancel class for the rest of the students.  I was so sad and so embarrassed.  I have no idea now if I can test for what I’ve been working on during every non-kid/non-work waking hour.  Time (and proactive rehab) will tell.

Anyway, I am in a state of surrender and focused on nourishing my body to heal – in many ways.  Emotionally, physically, everything.  I started putting collagen (which has numerous anti-inflammatory, anti-aging and restorative properties) back into my mornings lattes and shakes.  And to suit the season, I have been now adding it to my new pumpkin spice almond milk beverage.  It’s so simple, I can hardly call it a a recipe.

But, it’s so soothing and healing that I had to put it up on the blog with the hope that it helps you too.  Make it, put on big socks, then warm up in a ball on your couch cupping your mug.

It’s comforting and soothing — and the ingredients are simple and nourishing. Each ingredient has anti-inflammatory properties and it’s exactly what my soul (and my KNEE!) need.

Here we go with our pumpkin pie spice almond milk recipe.  It couldn’t be easier!

INGREDIENTS

+ 1 cup almond milk (I like New Barn or Califia or I make my own.)

+ dash of cinnamon

+ dash of pumpkin pie spice (about 1/4-1/2 teaspoon)  (I like Frontier’s no salt blend.)

+ 1-3 teaspoons of collagen.

+ 2-3 drops of stevia or 1-2 teaspoons of honey (or to your liking)


PUMPKIN PIE SPICE ALMOND MILK


DIRECTIONS

+ pour your chosen almond milk into a sauce pan.  add the spices and collagen.  heat the pan, allowing it to reach the point of almost boiling.

+ add stevia or honey and stir.

+ pour the liquid mixture into your favorite mug.  enjoy.  stay warm.  heal.  indulge in happy energy.  and welcome to december.
